When we think about healthy eating, one of the first suggestions we hear is: “Replace refined products with whole grains”.
But are we sure that everything whole is good for us? Or that it’s truly whole?
In this article, we expose the truths (and illusions) hidden behind many whole-grain products on the market, analyzing what the law stipulates, how these foods are actually processed, and what the possible health consequences are.
Once upon a time, whole grain meant exactly that: the entire grain, made up of endosperm, bran, and germ, was ground together. The result was a complete flour, rich in fiber, B vitamins, minerals, and good fats.
Today, in large-scale distribution, the reality is very different:
- The grain is refined, losing its most valuable components: bran and germ.
- Only the endosperm remains, which is the part richest in starch and poor in nutrients.
- Subsequently, bran is added separately to "reconstruct" the whole grain product.
This process creates a food that has the appearance of whole grain, but not its original properties. It's a bit like disassembling a car, reassembling it with low-quality parts, and selling it as new.
What does Italian law say?
According to Circular no. 168 of November 10, 2003, a product can be defined as "whole grain" even if made with refined flour + added bran and middlings, provided it provides a "significant fiber content."
In practice:
- A modest amount of fiber is sufficient to claim the label "with whole grain flour";
- It is not mandatory for the product to come from a truly whole-ground grain.
👉 The result? Many "whole grain" biscuits, rusks, bread, and crackers actually contain predominantly 0 or 00 flour, with a cosmetic addition of fiber.
Phytic acid: the truth about bran
Bran, rich in insoluble fiber, also contains an antinutrient: phytic acid (up to 3.14 g per 100 g).
This compound binds to important minerals such as zinc, iron, calcium, and magnesium, limiting their absorption.
👉 The result: "fiber-rich" products can reduce the bioavailability of essential nutrients, instead of improving it.
The impact on glycemic load is similar to refined products
Another reason why whole-grain products are chosen is their supposed ability to reduce glycemic load. But the data tells a different story:
- 30 g white rice → glycemic load 19.9
- 30 g brown rice → glycemic load 17.2
Only 2.7 points difference, a negligible value in a complete meal.
Furthermore, if the whole grain product is "reconstructed" and not authentic, the effect on blood sugar can be even more similar to that of refined products.
Fiber and intestine: beware of the irritating effect
Many recommend whole-grain products to combat constipation due to their fiber content. However, a distinction must be made:
- insoluble fiber (41.1%): irritating and mechanical effect
- soluble fiber (1.3%): hydrating and gentle
Insoluble fiber does not retain water, but stimulates the intestine with an abrasive action.
A bit like "sandpaper" on the intestinal mucosa, it induces a defense response (water + mucus) that can facilitate evacuation, but without respecting intestinal physiology.
So what to choose? Is the whole grain choice really good for you?
The goal should not only be to increase fiber, but to choose the right fibers:
- ✔️ Soluble fibers (from vegetables, fruits, flax seeds, psyllium)
- ✔️ Prebiotic fibers (which nourish the intestinal flora)
- ✔️ Hydration and daily movement
Conclusion: whole grain doesn't always mean healthy
The word "whole grain" is often used as a marketing lever. But in reality:
- There is no strict regulation on the use of the term.
- Many products are reconstructed, not authentically whole grain.
- Insoluble fibers can be irritating if not balanced.
- The benefits on blood sugar and satiety are overestimated.
