If you think "you can't eat sweets on a diet," this recipe will change your perspective. These low-carb, sugar-free ladyfingers are made with selected ingredients (erythritol, almond flour, and coconut flour) for a more controlled impact on blood sugar and insulin response.

Why these low-carb ladyfingers can also work for metabolic health

The point isn't the sweet taste itself: what really makes the difference is the quality of ingredients and the overall glycemic load of the meal.

  • Sugar-free: instead of traditional sugar, we use erythritol.
  • Low carb: selected flours (almond + coconut) instead of refined flours.
  • More suitable (in the right context) even for those working on insulin resistance (1) and blood sugar control.

Recipe: Low-Carb Ladyfingers

Servings: approximately 22–24 ladyfingers

Prep time: 10–15 min + baking

Baking time: 170°C for 16–18 minutes

Ingredients

  • 5 medium eggs (separated)
  • 115 g powdered erythritol
  • 100 g very fine almond flour
  • 15 g coconut flour
  • ½ generous teaspoon lemon juice or cream of tartar
  • 1 teaspoon vanilla extract
  • 1 pinch of salt

Instructions

  1. Beat the egg whites with salt + lemon/cream of tartar until very stiff peaks form.
  2. In a separate bowl, beat the egg yolks with erythritol until the mixture is light and foamy.
  3. Add the vanilla.
  4. Gently fold in the almond flour + coconut flour (preferably sifted).
  5. Gently combine the egg whites with the mixture, stirring from bottom to top to prevent deflating.
  6. Transfer to a piping bag and form sticks on a baking sheet (or in appropriate molds).
  7. Bake at 170°C for 16–18 minutes. Let cool before removing.

Practical Tip (texture and success) ✅

The secret is not to deflate the egg whites: fold them in slowly with wide movements. If the dough is too "loose," it's usually because the egg whites weren't beaten enough or were overmixed.
